Stained glass window gingerbread

Yields1 Serving
 12oz plain flour
 1/2 tspn salt
 2-3 tspn ground ginger
 1 tspn cinnamon ( optional )
 1 tspn bicarbonate of soda
 3.5oz butter
 6oz soft brown sugar
 1 beaten egg
 4 tblspn golden syrup
 Some boiled fruit sweets

Heat oven to 180c

Mix the flour , salt , bicarbonate of soda , ginger , and cinnamon ( if using )

Rub in the butter until it resembles fine breadcrumbs

Stir through the sugar, then get your hands back in to mix as soft brown sugar tends to clump

Beat the egg and add in the syrup . Coat the spoon in a little oil to make the syrup easier to fall from the spoon

Add this to the dry mix and combine

You make think the mix will not come together. But get your hands I'm and bring it together

Smash your sweets with a rolling pin

Roll out the dough on a floured surface

Cut into shapes . Cot a hole in the middle of each shape

Put on a lined baking tray . Fill the hole with crushed sweets . Use a straw to make a joke to thread ribbon through so you can hang on the tree and bake for 10-15 minutes

Leave to cool fully on the tray . Make sure the hole is still visible for the ribbon

When cooled you can decorate with glacé icing if liked

Hang on the tree on Christmas Eve .

To make biscuits just cut shapes and bake .
