Heat oven to 220c
Line a baking tray
Put the flour and sugar in a large bowl and mix
Put the butter in a saucepan and melt , you want to let it go a golden brown but not burnt , so keep watching
Pour the butter, milk and cream into the flour and sugar
Mix to bring it to a dough
Tip onto a floured board and pat it into a rectangle about 1" deep
Cut into 8 and put them on a baking tray
Brush the tops with a little cream and then sprinkle with sugar
Bake for 15-18 minutes until golden brown
Allow to cool
Hull and cut the strawberries, put in s bowl and sprinkle with some sugar
Cover and put in the fridge for at least an hour
Whip the cream with a little vanilla extract
To assemble , split the shortcake , top with strawberries and cream, put the top on garnish with a little mint and serve
