Tomato Salsa

Homemade Salsa is so easy to make...
Pico de gallo is a popular form of uncooked salsa made from lime juice and coarsely chopped raw ingredients including tomatoes, onions, and coriander leaves.
It's very versatile and can be as simple or as full flavoured as you wish.
It can be used as a side dish to pep up a salad, a topping on nachos, or served alongside a humble toasty or baked potato.
My favourite way to serve it is on a bed of spinach, garnished with some cashews. It makes a simple Hassleback potato dish very filling.
