Shopping for a Vegan Meal Plan

Most people think that shopping vegan is more expensive than shopping normally, but actually it doesn’t have to be! Yes, many products can be pricey, such as meat substitutes, but if you just go with essentials, such as veg, pasta, rice & potatoes, you can make very yummy and healthy vegan dishes for cheap. A lot of you asked for a vegan meal plan, so I’ve picked some of my favourite vegan recipes and linked a shopping list for them below. As Iceland offer really good frozen veg and have price locked some of them to just £1 I thought I’d recommend them for this shop.

Cauliflower Steaks

Cauliflower steaks are something different. I love cauliflower, personally, but I bet if your little ones aren’t fans of it, they’ll still enjoy this dish. It packs the cauliflower full of flavour by marinating it and it comes out of the oven nice and crispy. Have a look at my yummy roasted cauliflower steak below.

Cauliflower Steaks

You’ll need:

Cauliflower for £1.25

Potatoes, you can get 3kg for £2.50

Carrots for 89p

Vegetable oil, you can get 2L for £4.50

Lemon juice for 90p

 

In terms of spices, you only need a little salt & pepper, paprika and Italian mixed herbs. Head over to see my full recipe here.

Savoury Rice

This savoury rice recipe makes for a really versatile dish. It’s a really healthy and filling meal that’s also great for dieting without you losing out on flavour. You can use any veg or spices to make new versions of it and make it how you and your family like it in particular. Below I’ve put down Iceland’s frozen mixed veg, which consists of carrots, peas, sweetcorn and green beans, as it’s a really good price and saves you a lot of hassle.

 

For my savoury rice, you’ll need:

Long grain rice, you can get 1kg for £1.30

Mixed veg for £1

Veg stock, you can get 2 packs of Knorr stock pots for £2.50

 

Apart from these, all you need is a little turmeric and salt & pepper to taste. You can find my full recipe here. My savoury rice looks like this.

Other Vegan Meal Plan Inspiration

Apart from these two recipes, there are plenty more to find in my meal plan, so just to give you a sneaky peek, here are two of them.

Butternut Squash & Chickpea Curry – Vegan curry is among the most popular vegan meals. This particular example is really nice and creamy! It’s a lovely meal for slow cooking as well, which will save you energy costs.

Bean Burgers – It’s always healthiest if you know what goes into a dish, and making your own bean burgers means you can season it to your own taste and keep all the nasties out that you usually find in processed products like burgers. They’re really easy to make and so tasty!
