Pork Scratchings a la Tom Kerridge

A pub favourite you can make at home

 1kg Pork skin - Morrisons sell these or ask your butcher
 1 tblspn salt
 200ml white wine vinegar

Heat oven to 180c

Cut pork into pieces

Put in a large bowl

Add the salt and vinegar

Mix well and let stand for a couple of minutes

Put the pork onto a wire rack sat over a baking tray

Cook for 10-25 minutes until crispy and crackly

Better quality skin will cook quicker

Let cool l completely

Store in an airtight container
