Breakfast bites

Yields1 Serving
 3 slices of day or 2 old bread
 A little oil
 5 slices of streaky bacon
 A few mushrooms
 A tomato
 4 eggs
 Salt and pepper
 A little grated hard cheese

Heat oven to 200C

Cut 2 circles out of each slice of bread

Heat a little oil in a pan and fry the bread on each side until just browning

Sit the bread in the bottom of muffin tin

Cut 3 of the bacon rashers in half . Wrap them around the sides of the muffin tin

Chop the remaining bacon and fry , add in the chopped mushrooms

Drain on kitchen paper

Whisk the eggs in a bowl and season with salt and pepper

Add in the tomato, and cooked bacon and mushrooms

Pour the egg mix on top of the bread

Sprinkle with a little grated cheese

Bake for about 10-15 minutes

Can be eaten hot or cold
