3 slices of day or 2 old bread

A little oil

5 slices of streaky bacon

A few mushrooms

A tomato

4 eggs

Salt and pepper

A little grated hard cheese


1Heat oven to 200C

2Cut 2 circles out of each slice of bread

3Heat a little oil in a pan and fry the bread on each side until just browning

4Sit the bread in the bottom of muffin tin

5Cut 3 of the bacon rashers in half . Wrap them around the sides of the muffin tin

6Chop the remaining bacon and fry , add in the chopped mushrooms

7Drain on kitchen paper

8Whisk the eggs in a bowl and season with salt and pepper

9Add in the tomato, and cooked bacon and mushrooms

10Pour the egg mix on top of the bread

11Sprinkle with a little grated cheese

12Bake for about 10-15 minutes

13Can be eaten hot or cold

14These can be frozen
