Apple and Cinnamon Cake

A lovely cake for afternoon tea

50g brown sugar

1 teaspoon ground cinnamon

135g caster sugar

115g butter, softened

2 eggs

1 +1/2 tspns vanilla extract

200g plain flour

1 +3/4 tspns baking powder

120ml milk

1 large apple, peeled and chopped


1Heat oven to 180 C Grease and flour a 1lb loaf tin.

2Mix brown sugar and cinnamon together in a bowl.

3Beat caster sugar and butter together using an electric mixer until smooth and creamy.

4Beat in the eggs, 1 at a time, add vanilla extract.

5Combine flour and baking powder together in a bowl; stir into creamed butter mixture.

6Mix milk into the mixture until smooth.

7Pour half the cake batter into the prepared loaf tin; add half the apples and half the brown sugar mixture.

8Gently pat the apple mixture into cake batter. Pour the remaining batter over apple layer

9Top with remaining apples and brown sugar mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a spoon.

10Bake until a skewer inserted in the centre of the loaf comes out clean, usually about 30 to 40 minutes.

Can be served warm as a dessert with custard or cream or cold with a cuppa
