Bean salad

add your own favourites or leftovers


1/2 tin kidney beans

1/2 tin borlotti beans

1/4 red pepper

1/4 green pepper

1/4 onion

3 tbspns red wine vinegar

2 tbspn Olive oil

1 tspn lemon juice

Salt and pepper

1/2 tin sweetcorn


1Put the beans and sweetcorn into a bowl

2Finely dice the peppers add to the beans

3Finely dice the onion and add that to the beans

4In another bowl whisk the vinegar oil and lemon juice

5Season and pour over the vegetables

6Stir to combine and chill
