Use raspberries, strawberries, blueberries , blackberries they're all good

 375g self raising flour
 1tspn baking powder
 200g caster sugar
 125ml vegetable oil
 1 egg
 125ml milk
 1 tspn vanilla extract
 300g berries

Heat oven too 180c

Line a muffin tin with muffin cases

Put the flour, baking powder and sugar in a bowl.

In a spectate bowl whisk the oil, egg, milk and vanilla

Pour this into the dry ingredients and mix until just combined.

Add in the berries

Spoon mixture into muffin cases

Bake for 30-35 minutes

Cool on a wire rack

  1. I made these using gluten free flour. Added a little extra milk as gluten free stuff tends to be dry and they came out beautifully. Used a mix of strawberries, raspberries and blueberries.
