Berry Muffins

Use raspberries, strawberries, blueberries , blackberries they're all good

  • Cook: 30 mins
  • Yields: 12 muffins


375g self raising flour

1tspn baking powder

200g caster sugar

125ml vegetable oil

1 egg

125ml milk

1 tspn vanilla extract

300g berries


1Heat oven too 180c

2Line a muffin tin with muffin cases

3Put the flour, baking powder and sugar in a bowl.

4In a spectate bowl whisk the oil, egg, milk and vanilla

5Pour this into the dry ingredients and mix until just combined.

6Add in the berries and stir through the milk x

7Spoon mixture into muffin cases

8Bake for 30-35 minutes

9Cool on a wire rack

I made these using gluten free flour. Added a little extra milk as gluten free stuff tends to be dry and they came out beautifully. Used a mix of strawberries, raspberries and blueberries.

Feed your family for about £20 a week.
