Chocolate , vanilla , royal iced , fondant iced or buttercream , you decide

Ingredients

8oz butter

8oz caster sugar

4 eggs

8oz SR flour

2 tspns baking powder

Dash of vanilla extract

Jam to sandwich together

Buttercream , fondant icing or royal icing to decorate

Directions

1Heat oven to 180C

2Grease 2 7 " sandwich tons and line the bases with greaseproof paper

3Put all the ingredients into a large bowl and mix . You can do this by hand but an electric mixer is best

4Pour equal amounts into the tins , flatten down slightly

5Bake for about 25 minutes until light and springy , a skewer put in the cake should come out clean

6Cool in tin for a couple of minutes then turn onto a wire rack to cool

7When cooled sandwich together with jam and / or buttercream and get decorating

8If you want to make a chocolate cake swap 1oz of flour for 1oz of cocoa powder

9You will need to coat the cake with a thin layer of buttercream for the fondant icing to stick

10You can use square tins , oblong tins even shaped tins .
