Birthday Cakes

Chocolate , vanilla , royal iced , fondant iced or buttercream , you decide

 8oz butter
 8oz caster sugar
 4 eggs
 8oz self raising flour
 2 tspns baking powder
 Dash of vanilla extract
 Jam to sandwich together
 Buttercream , fondant icing or royal icing to decorate

Heat oven to 180C

Grease 2 7 " sandwich tons and line the bases with greaseproof paper

Put all the ingredients into a large bowl and mix . You can do this by hand but an electric mixer is best

Pour equal amounts into the tins , flatten down slightly

Bake for about 25 minutes until light and springy , a skewer put in the cake should come out clean

Cool in tin for a couple of minutes then turn onto a wire rack to cool

When cooled sandwich together with jam and / or buttercream and get decorating

If you want to make a chocolate cake swap 1oz of flour for 1oz of cocoa powder

You will need to coat the cake with a thin layer of buttercream for the fondant icing to stick

You can use square tins , oblong tins even shaped tins .
