Blue Cheese with pasta

Use up that Christmas blue cheese

 2 long shallots finely chopped
 2-3 garlic cloves minced
 75-100g any dry pasta per person ( I used orzo )
 0.5 bunch of sage chopped
 Knob of butter
 8 sage leaves
 Black pepper
 100-125g blue cheese ( I used Gorgonzola )

Cook the pasta in boiling salted water

Melt the butter in a pan

Add in the shallot, cook until softened but not coloured

Add in the garlic and chopped sage , cook on low

Put a little oil in a pan and heat

Fry the whole leaves until crispy

Drain the pasta

Add to the shallot, garlic and sage .

Mix well

Stir through the crumbled cheese

Serve topped with the crispy sage leaves and black pepper
