Bombay Potatoes

Yields1 Serving
 350g boiled potatoes , cubed and drained
 4 tbspn vegetable oil
 1/2 tspn mustard seeds
 2 pinches chilli powder
 1 tspn chilli flakes
 1/2 tspn tumeric
 Salt to taste

Heat the oil in a large frying pan on medium

To check that the oil is hot put a couple of mustard seeds in , if they pop it's hot enough

Add all the seeds , the chilli powder and tumeric and salt

Fry for a minute or 2 to release those flavours

Add the potatoes

Coat them in the mix and fry for about 5 minutes

Sprinkle on the chilli flakes

Cover and cook for another 5 minutes on a lower heat
