Bread Sauce

Yields1 Serving
 100g fresh breadcrumbs ( but from bread at least a day old )
 300ml milk
 1 medium onion or half large onion , quartered
 2-3 bay leaves
 6-8 whole peppercorns
 12 cloves
 A good knob of butter
 75ml double cream or extra milk
 Salt and pepper
 Freshly grated nutmeg

Stud the onion with the cloves

Put the onion , milk , bay leaves and peppercorns in a pan . Bring to a gentle simmer for 5-10 minutes

Take off of the heat and leave to infuse for at least 30 minutes

Strain the milk into a jug

Pour into a clean pan and put on a low heat

Add in the breadcrumbs and simmer for 5 minutes

Add the extra cream or milk stir well

8

Season with salt and white pepper

9

Grate in some fresh nutmeg . Taste and adjust seasoning

Can be made on the day or frozen. Defrost overnight and heat gently before serving
