Bread Sauce

100g fresh breadcrumbs ( but from bread at least a day old )

300ml milk

1 medium onion or half large onion , quartered

2-3 bay leaves

6-8 whole peppercorns

12 cloves

A good knob of butter

75ml double cream or extra milk

Salt and pepper

Freshly grated nutmeg


1Stud the onion with the cloves

2Put the onion , milk , bay leaves and peppercorns in a pan . Bring to a gentle simmer for 5-10 minutes

3Take off of the heat and leave to infuse for at least 30 minutes

4Strain the milk into a jug

5Pour into a clean pan and put on a low heat

6Add in the breadcrumbs and simmer for 5 minutes

7Add the extra cream or milk stir well

8Season with salt and white pepper

9Grate in some fresh nutmeg . Taste and adjust seasoning

10Can be made on the day or frozen. Defrost overnight and heat gently before serving
