Carrot Cake

Yields1 Serving
 175g wholemeal flour ( you could use self raising white )
 3 good tspns mixed spice
 1 tspn baking powder
 150 ml sunflower oil
 Pinch salt
 100g dried fruit ( I used raisins )
 3 beaten eggs
 250g grated carrots ( no need to peel just wash them )
 175g brown sugar
Topping ; ( optional )
 150g cream cheese
 4 tblspn icing sugar
 A few walnut halves

Heat oven to 180C

Grease and line a 1lb loaf tin

Put the flour, baking powder , salt , spice into a bowl

Stir in the sugar ,carrots, eggs , fruit and oil and mix well

Pour mix into the prepared tin

Bake for about 45-60 mins or until firm to touch and a skewer comes out clean

Cool in tin for 15 minutes then finish cooling on a rack

To make topping ; mix the cream cheese and icing sugar until smooth

Spread on top of cake and decorate with the walnuts
