Cheese and Bacon Muffins

Make up a batch for breakfast on the go

 250g plain flour
 1 tspn baking powder
 0.5 tspnfine sea salt
 175g cooked bacon chopped
 50g mature cheese plus extra for sprinkling if liked
 1 tspn mustard
 pinch of cayenne
 1 tspn picked thyme leaves
 2 eggs lightly beaten
 80ml sunflower oil
 125ml low fat yoghurt

Heat oven to 180c

Sieve the flour, salt and baking powder into a bowl

Add the rest of the ingredients and fold everything together gentlyuntil just mixed

Do NOT over mix

Spoon the mixture into the prepared muffin tins

Sprinkle over more cheese if liked

Bake for 20 to 30 minutes until golden and firm

Remove and allow to cool in the tin for 5 minutes
