Cheese and Bacon Muffins

Make up a batch for breakfast on the go

  • Prep: 5 mins
  • Cook: 25 mins
  • Yields: 10-12 Muffins


250g plain flour

1 tspn baking powder

0.5 tspnfine sea salt

175g cooked bacon chopped

50g mature cheese plus extra for sprinkling if liked

1 tspn mustard

pinch of cayenne

1 tspn picked thyme leaves

2 eggs lightly beaten

80ml sunflower oil

125ml low fat yoghurt


1Heat oven to 180c

2Sieve the flour, salt and baking powder into a bowl

3Add the rest of the ingredients and fold everything together gentlyuntil just mixed

4Do NOT over mix

5Spoon the mixture into the prepared muffin tins

6Sprinkle over more cheese if liked

7Bake for 20 to 30 minutes until golden and firm

8Remove and allow to cool in the tin for 5 minutes

Pop into microwave for a minute to reheat

On your list of ingredients it does say “half teaspoon of hyme leaves” will assume tymme leaves or can you point me to this herb as not heard of it xx
