Cheese and onion fritters

Lovely served with a dip

2 tblspn Plain flour

Salt and pepper

0.5 tspns paprika

1 egg

Splash of milk

50g finely grated mature cheddar

1 finely chopped onion

A few chilli flakes

Oil for frying


1Heat a little oil in a pan and sauté the onion until soft but not coloured

2Put in a bowl until cooled

3Put the flour , salt, pepper , paprika and chilli into a large bowl .

4Make a well and crack in the egg .

5Mix well add a little milk - you want a thick batter

6Stir through the cooled onion and grated chees

7The batter needs to be stiff

8Heat oil on a pan

9Drop spoonfuls of the batter into the hot oil

10Fry until browned then turn over and cook the other side

11Drain on kitchen paper
