Cheese and Onion Quiche

Delicious warm or cold

1 quantity shortcrust pastry

1 onion

1-2 tomatoes

6 eggs

100ml milk or cream

150g grated cheese

Salt and pepper


1Make up some shortcrust pastry

2Use half fat to flour and enough cold water to bind

3So if using 400g plain flour you'd need 200g of fat ( I use a mix of butter and Trex ) rub the fat into the flour until it resembles breadcrumbs

4add in the cold water and bring it together using a knife

5When it forms a dough , form it into a ball wrap it in cling film and chill for at least 30 mins

6Grease a flan tin

7take pastry from fridge dust the work surface with a little flour and roll out the pastry to fit the tin leaving enough to overhang the sides

8If your using a fluted tin use a piece of pastry to push it into the flutes

9Prick the base of the flan with a fork , and chill again for 10 minutes

10heat oven to 200C cover pastry with baking parchment top with baking beans , rice , pasta even coins and bake for 10 mins

11remove baking paper and bake for another 5 minutes

12Finely chop a medium onion and fry in a little oil until cooked but not coloured.Now trim your pastry . Slice a couple of tomatoes and put on the base of your quiche, mix 6 eggs , about 100ml of milk or cream season with salt and pepper. Stir in about 150 g grated cheddar and the softened onion . Pour into the pastry case and bake for 20-25 mins until golden and risen . If you want to add bacon or ham you can , or spinach or mushrooms or asparagus . Add what you like but the principles are the same
