Cheese & potato dumpling

kids loved these! Big thumbs up


2lbs of potatoes, peeled

2 eggs

3 to 4 oz of strong cheese, grated

Salt & pepper


1Cook the potatoes

2Set aside in the colander for 10 minutes

3Mash the potatoes, return the pan to hear, add the salt and pepper and mix well

4Add eggs and half the cheese, mix well again and stir until potatoes firm up

5Once cooled a little form into 24 small balls and roll in the remaining cheese

6Place on a greased baking tray and bake in a hot oven for 20 minutes
