Chewy Chocolate Chip Cookies

Served warm they're even tastier

250g plain flour

1/2 teaspoon bicarbonate of soda

1/2 teaspoon salt

170g melted butter

200g dark brown soft sugar

100g caster sugar

1 tablespoon vanilla extract

1 egg

1 egg yolk

325g chocolate chips


1Heat oven to 170c

2Line a baking tray with greaseproof paper

3Sieve the flour, bicarb and salt into a bowl

4In another bowl, cream together the melted butter, brown sugar and caster sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy.

5Stir in the sifted ingredients until just blended.

6Stir through chocolate chips using a wooden spoon.

7Drop about 3spoonfuls of dough per cookie onto the baking trays

8Do not flatten the dough. Cookies should be about 10cm apart.

9Bake for 15 to 17 minutes in the oven, or until the edges are lightly toasted. Cool on baking trays for a few minutes then put onto cooling racks to finish cooling

These will become firm favourites
