Chicken and Bacon Casserole

Chicken thighs are cheap and tastier then breast - great in this recipe

  • Cook: 8 hrs
  • Yields: 4 servings

Ingredients

8 chicken thighs

4 rashers of bacon chopped

1 onion diced

1carrot chopped

500-800g baby new potatoes

Chicken stock about a pint

Chicken seasoning - homemade or shop bought

Mixed herbs

Cornflour to thicken

Salt and pepper

Directions

1Season the thighs with the chicken seasoning - let them sit for at least 20 minutes

2Brown the chicken thighs in a pan in a little oil - or skin them and cook the skin and use the fat from that

3Remove them to a plate

4Add in the bacon and get it crisp - remove and put with the chicken

5Add in the carrots , onions and potatoes .

6When they have some colour add a little stock scraping all the bits from the pan.

7Add in the rest of the stock and herbs

8Put in the chicken and bacon and any juices from the plate , stir to combine

9Add a little salt and pepper

10Put a lid on and cook on the hob for about 45-60 mins

11In the oven at 160c for 1.5 hrs

12In a slow cooker for 6-8 hrs

13In a pressure cooker for 15 mins

14Add the cornflour water paste for last 15 mins and stir through

15If using a pressure cooker add it when finished and sauté for 2-3 minutes . Only use 0.5-0.75 pint of stock

16Check seasoning and serve .

Get the chicken skin crispy if you can and sit the thighs on top of the casserole

Just had this for Sunday tea. Very tasty and easy to do. Served 4 of us (two adults and two children) and plenty left over. Will definitely be making again.

Very nice recipe, I have ys casserole mix in freezer and Schwartz chicken casserole mix in cupboard so something to use 🙂
