Chicken and Vegetable soup

Simple, warming and tasty

  • Yields: 4 servings


1 medium potato diced

1 leek sliced

2 carrots diced

1-2 celery sticks chopped

1-2 garlic cloves minced

1-2 pints chicken stock (either from the carcass , see recipe on website or from cubes )

1tspn dried tarragon

Salt and pepper

Shredded chicken from your roast


use 2-3 chicken thighs that you poach in the stock

Oil or frylight


1Put a little oil or frylight in a pan and if using thighs seal them until coloured .

2Remove from the pan onto a plate

3Fry off the veg until just softening

4Add in the stock and seasoning add chicken thighs if using

5Let it cook until veg is softened about 20 minutes

6Remove the chicken thighs

7Blitz the soup

8Shred the thighs and add to the soup


10Add the shredded cooked chicken and heat through

11Can be cooked in slow cooker for 4-6 hours

12Cook for 8 minutes in the Pressure cooker

Bloody predictive text ! Strip as much as you can from the carcass , add onion , carrot , celery , bay leaf , peppercorns and water .
