Chipotle chicken

1TBSP veg oil

1 medium onion, diced

3 garlic cloves, minced

1/2tsp brown sugar

1tsp chipotle paste

400g tin chopped tomatoes

2 large chicken breasts

2 peppers sliced


1Heat the oil and cook the onion for 5 minutes. Add the garlic and peppers and cook for 3 minutes

2Stir in the sugar, chipotle paste and tomatoes then add the chicken

3Summer for 20 minutes

4Remove the chicken and shred with 2 forks.

5Add the chicken back into the sauce and stir well

6Serve with rice
