Proper homemade chips like your nan used to make

 800g potatoes
 500ml vegetable or sunflower oil ( or a block of beef dripping or lard to be truly authentic

Peel and cut your potatoes

Put into a saucepan and sit them under running COLD water until the water runs clear .

Either leave in cold water until needed or use straight away

Drain and dry the potatoes thoroughly

Heat the oil in a large pan or deep fryer to 130c --DO NOT LEAVE THE PAN

Put the chips into the HOT oil and fry for about 10 minutes until softened but NOT coloured

Remove the chips from the oil and drain on kitchen paper

8

Increase the heat of the oil to 190c

9

Put the chips back in and fry for another 3-5 minutes until golden

10

Drain on kitchen paper .

Season with a little salt and serve
