Proper homemade chips like your nan used to make

  • Cook: 15 mins
  • Yields: 4 servings


800g potatoes

500ml vegetable or sunflower oil ( or a block of beef dripping or lard to be truly authentic


1Peel and cut your potatoes

2Put into a saucepan and sit them under running COLD water until the water runs clear .

3Either leave in cold water until needed or use straight away

4Drain and dry the potatoes thoroughly

5Heat the oil in a large pan or deep fryer to 130c --DO NOT LEAVE THE PAN

6Put the chips into the HOT oil and fry for about 10 minutes until softened but NOT coloured

7Remove the chips from the oil and drain on kitchen paper

8Increase the heat of the oil to 190c

9Put the chips back in and fry for another 3-5 minutes until golden

10Drain on kitchen paper .

11Season with a little salt and serve
