Chocolate and nut brownies

4oz butter

5 oz sugar

2 eggs

2oz good quality plain chocolate chopped

2pz chopped walnuts or pecans ( optional)

1 tspn vanilla extract

2 tblspns black coffee

1.5 tspn baking powder

2oz Cocoa ( please not hot chocolate )

2oz plain flour


1Heat oven to 180C

2Grease and line a 7" square tin

3Cream the butter and sugar until light and fluffy

4Add in the eggs

5Fold in the nuts ( if using ) and chocolate

6Stir through the coffee and vanilla extract

7Mix in the sieved cocoa , flour and baking powder

8Pour into a prepared tin

9Bake for 30-40 minutes

10Cool in tin for 15 minutes then turn onto a rack to finish cooling

11Slice and serve

12Lovely warm with cream or ice cream and berries but delicious cold
