Clafoutis

Yields1 Serving
 1/2tblspn butter softened
 1 tblspn sugar
 300g fruit ( stoned weight )
 Icing sugar to dust
Batter:
 60g plain flour
 1/2 tspn baking powder
 60g caster sugar
 3 beaten eggs
 200 ml milk
 100ml double cream
 Dash of vanilla extract

Heat oven to 180C

Grease a 25cm round dish well with the butter

Sprinkle over the sugar

Put the flour , sugar , baking powder and a pinch of salt into a mixing bowl . Mix to combine

Make a well in the middle and whisk in the eggs , milk , cream and vanilla

Whisk well and set aside for about 30 minutes

Put the fruit in the greased tin and put in Ben for 5 minutes

Pour on the batter and return to the oven and cook for another 30-35 minutes

Sprinkle with icing sugar and serve warm ( not hot !! ) with cream or ice cream
