1/2tblspn butter softened

1 tblspn sugar

300g fruit ( stoned weight )

Icing sugar to dust


60g plain flour

1/2 tspn baking powder

60g caster sugar

3 beaten eggs

200 ml milk

100ml double cream

Dash of vanilla extract


1Heat oven to 180C

2Grease a 25cm round dish well with the butter

3Sprinkle over the sugar

4Put the flour , sugar , baking powder and a pinch of salt into a mixing bowl . Mix to combine

5Make a well in the middle and whisk in the eggs , milk , cream and vanilla

6Whisk well and set aside for about 30 minutes

7Put the fruit in the greased tin and put in Ben for 5 minutes

8Pour on the batter and return to the oven and cook for another 30-35 minutes

9Sprinkle with icing sugar and serve warm ( not hot !! ) with cream or ice cream
