Coconut Ice

300g dessicated coconut

300g icing sugar

1 tin of condensed milk (397g)

A couple of drops of pink or red food colouring


1Line a square baking tin with cling film and oil the cling film

2Put all the ingredients into a large bowl and mix well ( yes your arms may ache lol )

3Take half of the mix and put into the tray , pushing it as flat as you can

4Add a drop of pink or red food colouring to the remaining coconut mix . Combine well

5Put this on top of the White layer . Press down well

6Chill overnight to set

7Cut into squares and bag
