Coconut Macaroons

7 oz dessicated coconut

7oz sweetened condensed milk

1/2tspn vanilla extract

1 large egg white

A little dark chocolate melted


1Heat oven to 170C

2Lime a baking sheet with greaseproof paper

3In a large bowl mix the coconut , condensed milk and vanilla extract until combined

4Whisk the egg white until you get firm(ish) peaks

5Fold the egg whites into the coconut mixture

6Using an ice cream scoop (or your hands ) place balls of the mixture onto the baking sheet

7Cook for about 25 minutes

8Cool on a rack

9When cool enough to handle dip the bottoms in melted chocolate , place back on the greaseproof and leave till set
