Corned beef hash

Yields1 Serving
 4 large potatoes , cubed
 2 tblspns olive oil
 1 finely diced onion
 1 crushed garlic clove
 1 tin of corned beef , cubed
 1 tin of baked beans
 A little grated cheese ( optional )
 Salt and pepper
 Dash of Worcestershire sauce
 1 or 2 eggs per person

Boil the potatoes and then drain

Heat the oil in a large frying pan and fry the onions

Add in the garlic and seasoning , stir well

4

Add in 2/3 of the potatoes and fry for another 5 minutes

Add the corned beef and beans and stir well

6

Pour into an oven proof dish

Add a little more oil to the pan and fry the remaining potatoes until browned

Put on top of hash

Sprinkle with cheese ( if using )

Put under a hot grill until cheese has melted

Serve topped with a fried ( or poached )egg or 2
