Cornflake Tart

100g butter cubed

225g plain flour

1 beaten egg

A little cold water

110g golden syrup

80g butter

30g sugar

Cornflakes ( enough to mix in and fill your dish )

110g strawberry or raspberry jam


1Put the flour and butter into a bowl and rub together to form breadcrumbs

2Add the egg to bind and a little water if needed. Wrap and chill for 30 minutes

3Heat oven to 200C

4Roll out the pastry and line a butter 20 flan dish . Prick all over

5Bake blond for about 20 minutes

6In a large panels the golden syrup , butter and sugar

7Remove from the heat and stir in the cornflakes

8Spread the jam over the base f the cooked pastry

9Top with the cornflake mix and put back in the oven for 5 minutes so the mixture sets
