Cranberry Sauce

100ml orange juice

100g brown sugar

250g cranberries

1/2 stick of cinnamon and a few cloves ( tied in a piece of muslin)

1/2tspn ground ginger

Splash of port ( optional )

A little orange zest


1Put the orange juice , port ( if using ), sugar , ginger and muslin bag of spices in a pan and heat until the sugar has melted .

2Pour in the cranberries and stir

3Add the orange zest and cook for 10 minutes

4Remove the muslin bag .As it cools it will thicken

5Once cool freeze Take out the night before and give a good stir before serving
