Prep: 15 mins Cook: 20 mins Yields: About 20 muffins Ingredients 140g plain chocolate-broken 375g self-raising flour 1tblspn baking powder 55g cocoa powder 85g caster sugar 2 eggs 1-2 tspns vanilla extract 6tblspns sunflower oil 375ml milk 140g white chocolate chips or cut up Directions 1Preheat oven to 200c 2Put muffin cases into muffin tins 3Melt plain chocolate over simmering water, stirring constantly until smooth. Do NOT let the water boil or touch the bowl 4 Let it cool a little 5Sieve the flour, baking powder and cocoa into a bowl and stir through sugar. 6In another bowl, beat together eggs, vanilla, oil and milk. 7 Stir in the melted chocolate. 8Fold this into the dry mix then fold through the white chocolate .
