Farmhouse Fruit Cake

8oz SR Flour

8oz Granulated Sugar

2oz Sultanas

2oz Currants

2tbsn mixed peel or do as I do and grate a carrot,

4oz butter

2 beaten eggs

4 tbspns Milk

A little Demerara Sugar


1Heat oven to 180C

2Grease and line a 7" round cake tin

3Rub the butter into the flour

4Add the sugar and fruit, stir to mix it through

5Add the eggs , beating them in with a wooden spoon

6Add enough milk to give a dropping consistantcy

7Step 7

8Put into the cake tin

9Sprinkle the top with Demerara sugar and pat it down

10Bake for about an hour or until a skewer comes out clean

11If the top is browning too much , cover it with baking paper.

12Cool in the tin for 5 minutes and then put onto a wire rack to continue cooling
