Filo pastry Quche

Ingredients

3 sheets of filo pastry halved

3 eggs

Dash of cream or milk

1 heaped tspn Dijon mustard

3 rashers bacon cooked and chopped

3oz grated strong cheddar -add more if you like it cheeset

1/2 a chopped onion

Salt and pepper

Melted butter

Directions

1Heat oven to 200c. Grease a pie dish .

2Cook down the onion in a little butter

3Whisk the eggs. Add in the cream or milk , mustard and seasoning.

4Layer up the filo sheets , brushing with melted butter between each one .

5Sprinkle the cheese on top . Then add the onions . Pour over the egg mix . Then sprinkle over the bacon .

6Put in the oven , after about 10 minutes. Turn the oven to 170c and cook until the egg is set ( about 15-20 minutes .

7Remove from oven and leave for about 5 minutes before cutting
