Fish Tacos

Yields1 Serving
 4 White fish fillets , cut in half lengthwise
 2 tblspn olive oil
 1 tblspn cumin
 2 tspns paprika
 2-3 minced garlic cloves
 8 small tortillas
 Cup of frozen ( defrosted) sweet corn or a tin drained
 0.5-1 whole red chilli finely sliced
 Chopped coriander
 A dash of white wine vinegar
 Squeeze of lime
 1 red onion finely sliced
 Pinch sea salt
 2tblspns white wine vinegar
 4 tspns mayonnaise
 Siraccha or other hot sauce to taste
 Shredded lettuce

Heat oven to 220c

Mix the cumin and paprika and rub over the fish , lay on a baking tray

Mix the garlic and olive oil put to one side

Put the sweet corn , chopped chilli a little salt a dribble of white wine vinegar and some of the chopped coriander in a bowl and mix

Put the sliced onion in a bowl add a little salt and the 2 tblspn a white wine vinegar in a bowl

Mix the mayonnaise and hot sauce in a bowl

Brush the garlic oil over the fish fillets . Put in the oven and cook for up to 10 minutes but do not overcook the fish

Heat the tortillas

Assemble the tacos put the mayonnaise on the base then some lettuce fish , salsa and onions how you like .
