Glamorgan Sausages

6oz Caerphilly cheese finely grated ( use an alternative if you can't find it )

4oz fresh breadcrumbs

2 tblspns very finely chopped leeks or spring onions

3 tblspns chopped parsley

1/4 tspn mustard powder

1/4 tspn dried thyme

Salt and pepper

2 seperated eggs

1.5oz dried breadcrumbs

Oil for deep frying


1Put the cheese , fresh breadcrumbs, leeks or spring noons, parsley, thyme, and mustard powder into a bowl. Season with salt and pepper

2Mix in the egg yolks to make a stiff paste

3Divide into 8 equal sized portions

4Roll each one into a sausage shape

5Whisk the egg whites to combine

6Dip your sausages into the egg white and then roll in the breadcrumbs

7Fry for about 4 minutes in hot oil

8Drain well and serve
