Add your choice of dried fruits

  • Cook: 45 mins
  • Yields: 1 large jar

Ingredients

50g coconut oil

120ml honey or maple syrup

½-1½ flaked salt

340g jumbo oats

200g mixed nuts, roughly chopped

50g pumpkin seeds

50g dried coconut shavings

80-100g mixed chopped dried cranberries,dates and sour cherries

Directions

1Heat the oven to 150c

2Grease and line a baking tray with greaseproof paper.

3Put the oil, honey/maple syrup and salt in a small pan and heat gently until the oil has melted

4Remove from the heat and allow to cool slightly.

5Mix the dry ingredients, apart from the fruit, in a large bowl.

6Stir the honey and oil into the bowl until well mixed

7Spread out on the baking sheet and bake for about 30-35 minutes until golden, stirring occasionally so it cooks evenly

8Leave to cool and crisp up on the tray, then stir in the fruit. Store in an airtight container.

So glad you pointed this out – I have sausage fingers ! It’s 150c . I’ve changed it now at 250c it’d be burnt to a crisp . P
