Hassleback Potatoes

an alternative to your common or garden roast potatoes . They look impressive but at so easy


A couple of potatoes per person ( more if smaller potatoes or larger appetites

2 tablespoons melted butter

Salt and pepper


1Heat oven to 220C

2Peel potatoes , you can leave the skins on if you prefer

3Put a skewer through the bottom of the potato

4Now make slices down the potato. The skewer ensures you don't cut all the way through

5Remove the skewer and put the potato in a bowl of cold water

6When all the potatoes are cut , drain them

7Place cut side up in a small roasting dish , drizzle on half the butter and season well

8Bake for 35-40 mins , basting occasionally

9Remove from oven and drizzle with the remaining butter

10You could sprinkle some chopped cooked bacon and some cheese onto the potatoes for the last 10 minutes of cooking if liked
