Hassleback Potatoes

an alternative to your common or garden roast potatoes . They look impressive but at so easy

 A couple of potatoes per person ( more if smaller potatoes or larger appetites
 2 tablespoons melted butter
 Salt and pepper

Heat oven to 220C

Peel potatoes , you can leave the skins on if you prefer

Put a skewer through the bottom of the potato

Now make slices down the potato. The skewer ensures you don't cut all the way through

Remove the skewer and put the potato in a bowl of cold water

When all the potatoes are cut , drain them

Place cut side up in a small roasting dish , drizzle on half the butter and season well

8

Bake for 35-40 mins , basting occasionally

9

Remove from oven and drizzle with the remaining butter

10

You could sprinkle some chopped cooked bacon and some cheese onto the potatoes for the last 10 minutes of cooking if liked
