Honey Mustard Sausages with Sweet potatoes

1or 2 sausages per person

1 sweet potato per person

1 red onion cut into wedges

1 yellow pepper cut into thick strips

4tbspn runny honey

4tbspn whole grain mustard

A little oil to drizzle

Salt and pepper


1Heat oven to 200c

2Heat oven to 200c

3Mix the honey and mustard in a large bowl

4Slice the sweet potatoes into wedges

5Place the sausages and vegetables into the bowl and toss in the oil . Tip everything into a dish . Pour over remaining dressing . Drizzle with oil , season with salt and pepper and bake for 30-40 minutes

6Slice the sausages lengthways and then into chunks before serving . Why slice the sausages ? It makes it seem as though you have more meat
