Joanna’s Aduki Vegetable Lasagne

1 tin aduki beans

1 tin tomatoes

Vegetable stock cube

A good splash red wine

1 tspn marmite

1 tspn dark soy sauce

Pinch of cinnamon

Salt and pepper

Chopped peppers

Sliced onion

Sliced mushrooms

Sliced courgette

Any other veg you like

Lasagne sheets

Cheese sauce


1Fry the onions add the crumbled stock cube and tomato purée

2Cook for a couple of minutes

3Add in the wine and remaining vegetables along with the beans

4Add seasoning

5Cook until the vegetables are softened

6Spoon half of this mix into the bottom of a baking dish

7Lay the lasagne sheets on top

8Then add the remaining veg mix

9Then more lasagne sheets

10Finish with the cheese sauce

11Cook until the sauce is browned and bubbling

if your not vegetarian you could use beef stock cube
