Leek and Ham Mornay

6 medium sized leeks

50g butter

50g plain flour

1 pint milk

100g grated cheese

1 tspn English mustard

6 or 12 slices of ham

A handful of breadcrumbs


1Cook the leeks for about 8 minutes in boiling salted water


3Melt the butter in a pan . Add the flour and cook for a few minutes, gradually whisk in the milk

4Add in the mustard and 3/4 of the cheese . Stir well and cook for another 3-5 minutes

5Heat the grill

6Wrap the leeks in 1 or 2 slices of the ham. Put in a greased dish

7Pour over the sauce . Sprinkle over the remaining cheese and breadcrumbs

8Place under the hot grill and cook for about 5 minutes until golden

9Serve with salad and crusty bread or a jacket potato

10Can be frozen before grilling
