Onion Relish

Great in hotdogs or burgers , lovely in a cheese toastie

  • Cook: 50 mins


4 large thinly sliced onions

2tblspn oil

3-4 garlic cloves grated

1 tblspn paprika

1 tspn onion powder

1 tspn garlic powder

0.5 cup white or white wine vinegar

0.5 cup brown sugar

3-4 tblspns tomato purée

1 tspn salt

1 tspn black pepper

2 cups water

1 tbspn cornflour

2 tblspn water


1Heat the oil in a large pan

2Add the onions and stir to coat in the oil

3Add garlic and mix

4Stir through the purée, vinegar and brown sugar

5Cook for a couple of minutes

6Add the 2 cups of water and mix well

7Bring to a boil

8Turn down to a simmer

9Cook until the mix has reduced by about a half and has thickened

10Mix the cornflour and 2 tblspn of water

11Add to the mix and cook for a couple more minutes

12Pour into sterilised jars

13Store in the fridge

Make up just half the recipe if liked as it well not keeps for 3 months
