Pasta with sardines

A quick healthy cheap lunch


300-400g spaghetti

2 tsp olive oil

1 medium red onion chopped

1 clove garlic minced

A good pinch or two of chilli flakes

300g cherry tomatoes, halved

160g frozen peas

300ml passata

Large tin of sardines in tomato sauce

1-2 tblspn chopped fresh basil leaves

Ground black pepper


1Cook spaghetti in a large pan of boiling Salted water until just cooked

2Heat olive oil in a pan

3Add the onion and garlic and sauté for 5-7 minutes until onion is softened.

4Stir in chilli flakes, tomatoes, peas, passata and sardines with their sauce,

5Roughly break up the sardines

6 Cover and simmer for about 5 minutes or until sauce is hot and tomatoes are softened.

7Stir in basil; season with black pepper.

8Drain spaghetti, reserving a couple of tblspns of the cooking water; add reserved cooking water to sardine sauce in pan.

9 Add spaghetti to sauce, toss to mix well.
