Pasta with sardines

A quick healthy cheap lunch

Yields4 Servings
 300-400g spaghetti
 2 tsp olive oil
 1 medium red onion chopped
 1 clove garlic minced
 A good pinch or two of chilli flakes
 300g cherry tomatoes, halved
 160g frozen peas
 300ml passata
 Large tin of sardines in tomato sauce
 1-2 tblspn chopped fresh basil leaves
 Ground black pepper

Cook spaghetti in a large pan of boiling Salted water until just cooked

Heat olive oil in a pan

Add the onion and garlic and sauté for 5-7 minutes until onion is softened.

Stir in chilli flakes, tomatoes, peas, passata and sardines with their sauce,

Roughly break up the sardines

Cover and simmer for about 5 minutes or until sauce is hot and tomatoes are softened.

Stir in basil; season with black pepper.

Drain spaghetti, reserving a couple of tblspns of the cooking water; add reserved cooking water to sardine sauce in pan.

Add spaghetti to sauce, toss to mix well.
