Polenta Chips

2 cups of polenta

3 cups of stock ( chicken or vegetable)

1 cup of water

1/2-3/4 cup of grated Parmesan cheese

A little salt

Your favourite herbs and spices ( I used fresh chopped rosemary)

A big knob of butter


1Bring the water and stock to a rolling boil

2Add in the polenta and whisk , whisk , whisk

3Cook the polenta for about 10 minutes , stirring well

4Add in the butter , cheese, salt and herbs . Mix well

5Check seasoning and add more if needed

6Pour into a clingfilm lined tin , pat down and chill for a couple of hours

7Heat oven to 200C

8Tip out the polenta and cut into chips

9Spray cooking oil on a baking tray put the chips onto it , spray again

10Bake for about 30-40 minutes until crispy on the outside . Turning halfway through
