Potato Cakes

500g peeled potatoes

Approx 50g plain flour

1/2 tspn salt

Pinch of ground nutmeg

a little pepper

Finely chopped chive or other herbs ( optional )

Butter or oil to fry

1 egg


1Cook the potatoes and then mash ( a potato ricer is great for this )

2Let them cool

3Sift the flour and salt into the potato and mix well

4Make a well in the mash and add the egg, pepper nutmeg and herbs ( if using)

5Mix well

6On a board form the mixture into a fat sausage shape

7Cut discs about a cm or so thick

8Reshape if need be

9Heat the oil or butter in a pan

10Fry the cakes on both sides for about 5-10 minutes until golden
