300g Plain Flour

pinch of salt

50g Chilled Butter Cubed

Cold Water to bind

120g Butter Frozen

mix the flour and salt in a large bowl. Rub in the chilled butter

Pour in enough water to create a dough

Roll out the dough on a lightly floured surface to form a rectangle

Grate half the frozen butter over the bottom 2/3 of pastry

Fold down the top 1/3 and fold up the bottom 1/3

Turn the dough 90 degrees making it rectangle again.

Grate the remaining butter over bottom 2/3 and repeat the folding process

Wrap in cling film and chill for at least 30 minutes before rolling and using
