Ingredients

1300g Plain Flour

2pinch of salt

350g Chilled Butter Cubed

4Cold Water to bind

5120g Butter Frozen

6mix the flour and salt in a large bowl. Rub in the chilled butter

7Pour in enough water to create a dough

8Roll out the dough on a lightly floured surface to form a rectangle

9Grate half the frozen butter over the bottom 2/3 of pastry

10Fold down the top 1/3 and fold up the bottom 1/3

11Turn the dough 90 degrees making it rectangle again.

12Grate the remaining butter over bottom 2/3 and repeat the folding process

13Wrap in cling film and chill for at least 30 minutes before rolling and using
