Red Cabbage braised with apples

1/2 red cabbage core removed and finely sliced

1/2 an onion finely sliced

1 eating apple cored and sliced

Splash of red wine vinegar

2 star anise ( optional )

Knob of butter

Salt and pepper

Brown sugar to taste

A little water


1Melt the butter in a large pan

2Add in the onions and coat in the butter , sauté for 5 minutes without colouring

3Add in the apple and cook for a further 2 minutes

4Add in the red cabbage and stir well to combine the ingredients add in the star anise if using and salt and pepper

5Add a good splosh of red wine vinegar and stir well

6Add a small amount of water ( just make sure the base of pan is covered ) . Put on a close fitting lid and cook for about 1 -1.5 hrs , stirring occasionally

7Remove star anise before serving and test for sweetness adding a little sugar if needed

8Once sautéed this can be cooked in a pressure cooker for 30minutes

9Again once sautéed it could be cooked in a slow cooker on high for about 4 hours

10Suitable for home freezing
