Roast Pork with Crispy Crackling

A perfect crackling


A pork joint approx 1-1.5 kg

a little oil

Sea salt and pepper


1Heat oven to 220C

2Score the pork using a sharp knife ( or better still get the butcher to do it )

3Pour a little oil onto the fat , making sure it drizzles into where you've scored the fat

4Season with lots of sea salt and black pepper and rub it in

5Put into a baking tray

6Roast for 25 minutes per lb plus an extra 25 minutes

7Leave to stand for at least 10 minutes before carving

8Serve with traditional trimmings ,
