Salmon Hash

Yields1 Serving
 1 salmon fillet per person
 800g diced part boiled potatoes
 1 red onion thinly sliced
 5 rashers of bacon chopped
 A few cooked green veg
 Rapeseed oil
 A couple of knobs of butter
 Salt and pepper

Heat some rapeseed oil in a pan add the bacon and onion , cook until coloured

Add in the part cooked potatoes and cook until they're coloured . Finish with a knob of butter and some salt and pepper

In another pan heat some more oil , season the salmon with salt and pepper

Put the fillets in the oil and cook on both sides for about 3-4 minutes per side

Add in a good knob of butter and baste the fillets for a minute or so

Serve on top and f the hash and with a salsa ( recipe on here )
