Sausage Pie

1 packet shortcrust pastry ( or make your own )

1 packet puff pastry

1lb sausage meat

1 onion diced

2 tspns chopped dried sage

1 tspn fennel seeds

1 sliced tomato

Salt and pepper

1 beaten egg

A little oil


1Heat the oil in a frying pan

2Sauté the onions until starting to soften then add in the sage and fennel seeds

3Cook for 5 minutes

4Put into a large bowl to cool

5Heat oven to 180C

6Roll out the shortcrust pastry . Line a greased pie dish

7Mix the sausage meat in with the onion mix and season with salt and pepper

8Put the sausage meat in the pastry base

9Top with sliced tomatoes

10Roll out the puff pastry and top the pie

11Crimp to seal and brush with an egg glaze

12Cook for about 45 minutes or until golden
